Avocado Banana Muffins
Let me preface this by being painfully clear; you are only going to enjoy this recipe if you think avocados and bananas are delicious. If you're not a fan of these fruits, this one is not for you. Like, discontinue reading this, because you're not going to think these are tasty. However, if you do enjoy avocados and bananas, look no further for your ideal breakfast. These muffins are a healthy low-sugar alternative to chocolate chip muffins. They are perfect for mornings on the go or a midday snack!

Total Time: 30 minutes
Yields: 6 servings (6 muffins)
Ingredients
- 1 avocado, ripe
- 2 bananas, ripe
- 3 tbsp of honey (can be substituted for maple syrup)
- 2 eggs
- 2 cups of flour
- 2 tsp baking powder
- 1 tsp of vanilla
- 1/2 cup of chocolate chips, dark
Directions:
- Preheat oven to 355°
- Blend the avocado, banana, honey, and vanilla until smooth
- In a separate bowl, sift the flour and the baking powder
- Gently combines the dry ingredients to the wet mixture (careful not to over mix)
- Spoon into greased muffin tin, fill 3/4
- Bake for 20 minutes
- Let them cool in tray
- Consume every morsel
