Shrimp Pico De Gallo

The freshness continues with the perfect Spring/Summertime appetizer! This chunky, vibrant dip will get the fiesta started. With bold flavors and delicious health benefits, you cannot go wrong with this refreshing, simple dish.


Prep Time: 15 minutes

Cook Time: 5 minutes

Total Time: 20 minutes

Yields: 6 servings

Ingredients:

- 1 pound of medium shrimp, tails removed

- 1/3 cup of lime juice, divided

- 1/3 cup of avocado, diced

- 1 cup of tomatoes, diced

- 1 clove of minced garlic

- 1/2 inch of ginger, minced

- 1 cup of mixed sweet bell peppers, chopped

- 1/2 cup of red onion, diced

- 1/3 cup of jalapeno, minced (optional)

- 1/4 tsp of taco seasoning

- 2 tbs of finely chopped cilantro, divided

- a few pinches of red chili flakes (optional)

- Serving chips

Directions:

- In a small non-stick skillet, heat the garlic, ginger and half of the lime juice for one minute on high

- Add the shrimp and cook for about two minutes per side, or until completely opaque. Then, remove from heat

- Chop all vegetables and combine in a bowl with the remaining lime juice, taco seasoning, chili flakes, and one tbs of cilantro

- Toss to coat

- Chop the shrimp into small pieces

- Mix into the bowl

- Allow it to sit at room temperature for at least fifteen minutes

- Garnish with cilantro

- Enjoy

An essential step to this recipe is to let the ingredients rest + soak up the flavor for at least fifteen minutes. If you have more time to dedicate to this dish, set it in the refrigerator for a couple of hours while you tend to decorations or party prep. This step will enhance the flavor. After your desired rest time, let the party begin!
