Roasted Lemon Garlic Chicken
Winner, winner chicken dinner! Earn your chef of the century badge with this one and done sheet pan dish. Tonight, try some chicken that is bursting with flavor, and it does not take much time out of your evening to prepare.

Yields: 6 servings
Ingredients:
6 boneless chicken thighs and/or breasts
1/3 cup of extra virgin olive oil
6 cloves of garlic, 2 finely chopped, 4 whole cloves
1 cup of fresh parsley, chopped
1/4 cup of oregano, chopped
1 cup of fresh basil, chopped
4 tablespoons of salted butter, cut into 6 slices
2 lemons, 1 halved, 1 sliced
Salt + pepper to taste
Directions:
Preheat the oven to 350°
On a rimmed baking sheet, combine chicken, olive oil, two finely chopped garlic cloves, chopped parsley, oregano, basil, and a large pinch of salt and pepper.
Incorporate until the chicken is fully coated
Arrange lemons and whole garlic cloves around the chicken
Add one slice of butter on top of each piece of chicken
Transfer to the oven + roast for 20 minutes
*Keep an eye on smaller pieces of lemon + garlic cloves to ensure they are not burning.
After bake time, squeeze roasted lemon on the chicken and garnish with parsley
