Lemon Garlic Salmon

Yields: 6 servings
Ingredients:
2 lb salmon filet or two pounds worth of salmon cuts
2 large lemons, juiced
3 tbsp extra virgin olive oil
5 garlic cloves, chopped
2 tsp dried oregano
1 tsp paprika
1 tsp black pepper
For garnish:
Lemon slices
Parsley
Salt to taste
Black pepper to taste
Directions:
Preheat oven to 375°
In a small mixing bowl or measuring cup, mix lemon juice, extra virgin olive oil, garlic, oregano, paprika, and black pepper
Whisk until incorporated
Prepare a lined baking sheet with foil (provide enough foil to line + cover the top of the salmon while baking), brush olive oil on the foil, and place the salmon on top
Generously season the salmon filet with salt and pepper on both sides
Brush the lemon garlic sauce onto both sides; make sure to spread the sauce evenly
Fold the foil over the salmon (steam-side up)
Bake for 15-20 minutes depending on the thickness of the filet
Carefully remove from the oven and open the foil to uncover the top of the salmon
Broil for 3 minutes or until the salmon is fully cooked
