The Classic

Apple pie will never go out of style. I could eat apple pie 24/7 365. It is the perfect thank you gift, the OG of desserts. Apple pie is an All-American classic, but today we are going Dutch. I am not entirely on that 1950’s housewife lattice status, but this crumb topped apple pie might be even more delicious.


Prep Time: 90 minutes

Cook Time: 40 minutes

Total Time: 2 hours and 10 minutes

Yields: I pie, 8 servings

Crust ingredients:

- 2 eggs

- 2 1/2 cups flour

- 1 tsp salt

- 1 1/2 sticks butter, cold and cut into cubes

- 4-8 tbs ice water

*There would be absolutely no judgement from me if you wanted to completely skip the making your own crust step and buy one from the store. I’m extra so I have to start from the ground up.

Filling ingredients:

- 2 1/2 pounds (7 or 8 medium sized) Granny Smiths apples. cored + sliced

- 1 cup brown sugar

- 2 tsp flour

- 1/4 tsp salt

- 2 tsps cinnamon

- 1/4 tsp nutmeg

- 1/3 cup lemon juice

- 1 3/4 tbs cornstarch

- 3 1/2 tbs butter

Crumb topping ingredients:

- 6 tbs unsalted butter

- 1 1/2 cups all purpose flour

- 1/2 cup light brown sugar

- 1/4 tsp kosher salt

- 1-2 tsp ground cinnamon

Crust Directions:

- Combine the ice water + eggs

- Combine the flour, butter, and salt into a mixing bowl and mix with your finger tips

(All of these ingredients have to remain as cold as possible so work quickly!)

- Mix all of the crust ingredients together, until the crust is a solid dough texture and it’s able to be packed into a disc shape

- Wrap it in cling warp and let it chill for 30 minutes in the refrigerator

- Make a flour bed and roll our the pie crust until the dough is about 1/8 of an inch

- Fit the crust into the desired baking pan + let it chill in the fridge whilst making the filling

Filling Directions:

- Preheat oven to 400°

- Wash, peel, core, and thinly slice the apples

- Add apples, brown sugar, salt, lemon juice, and cornstarch into a mixing bowl

- Let the mixture rest for 30 minutes, stirring in every 10 minutes

- Place mixture into a colander + drain out the liquid SAVE THE LIQUID

- Boil the liquid down + add the butter

- Once the mixture reaches caramel like consistency, pour it onto the apples and mix it in

- Pour the filling into the dough lined baking pan and pack the apples in

Crumb Topping Directions:

- Melt butter

- Add dry ingredients

- Stir until the mixture has sand like consistency

- Sprinkle crumb topping onto the the pie filling

- Place pie in the middle of the oven + bake for 40-45 minutes

There you have it! The perfect classic American/Dutch mashup up. As my culinary skills advance, I might switch things up and try a lattice braid or basket weave, but until then, I am going to keep things nice and simple. Pair this baby with vanilla ice cream and the crowd will go wild! The children I served this to sure did.
