Garlic Parmesan Zucchini Chips

Do you really need a reason to snack on chips, the short answer is no? If you're looking for a healthy and delicious alternative to regular chips, look no further than the scrumptious zucchini chip. These chips are the perfect appetizers for any occasion, and they guarantee a good time. I have not one, but two great recipes for your dinner party or game day food.


Prep Time: 20 minutes

Cook Time: 20 minutes

Total Time: 40 minutes

Yields: 6 servings

Ingredients:

- 2 large zucchini

- 2 eggs

- 2 cups of breadcrumbs

- 3/4 cup of parmesan cheese

- 1/3 cup fresh basil, chopped

- 1 tbs of garlic salt

- 1/2 tsp of salt (optional)

- 1 tsp of pepper

- 1 1/2 tsp of red pepper flakes

Get ready to be crowned snack royalty.

Directions:

- Preheat oven to 450°

- Cut the top root and bottom end off of the zucchini

- Slice zucchini into 1/4 inch thick rounds

- In a large bowl, mix breadcrumbs, parmesan cheese, basil, red pepper flakes, pepper, and garlic salt

- In a small bowl, whisk eggs

- Dip the zucchini slices in egg wash, then coat both sides in the breadcrumb mixture. Lay slices on a large aluminum lined baking sheet

- Bake in the oven for 20 minutes, flipping the chips to bake on the other side at the 10-minute mark

BONUS RECIPE

You can't have chips without dip, I mean really. These zucchini chips pair perfectly with a creamy, dipping sauce we are going to share with you now graciously.

Total Time: 5 minutes

Yields: 2 servings

Ingredients:

- 1/3 cup of mayonnaise

- 1 tbs of lemon juice

- 1 tbs of garlic powder

- 1/2 tbs of salt

-1 tsp of pepper

Directions:

- In a small bowl, mix together all of the previously mentioned ingredients
