Pesto Pasta


Pasta makes my world go round. It is simple, delicious, and it feeds a ton of people, and it is incredibly inexpensive. Pesto pasta gives a unique twist on regular spaghetti, and it is a tad bit healthier for you as well. Try the dish the next time you have family or friends over for a nice dinner. 


Prep Time: 20 minutes

Cook Time: 10 minutes

Total Time: 30 minutes 

Yields: 8 servings 

Ingredients: 

- 1 can organic pesto sauce 

- 10 ounces pasta of choice

- 2 tsp salt 

- 3/4 cup water 

-Parmesan for serving (optional)

Directions:

- Bring a large pot of water to the boil with the salt

- Add pasta and cook for the length of time per the packet

- Just before draining, scoop out 1 cup of the pasta cooking water

- Drain pasta in a colander, leave it for a minute

- Transfer pasta to a bowl do not use pasta cooking pot

- Add pesto and 1/4 cup of pasta water

- Toss to coat the pasta in pesto, adding more water if required to make pasta silky and saucy, rather than dry and sticky

- Taste, add more salt and pepper if desired

- Serve immediately, garnished with fresh parmesan
