Cook Time: 4 or 8 hours

Total Time: 8 hours and 10 minutes

Yields: 14 servings

Ingredients:

- 2 medium carrots

- 2 leek stalks

- 2 medium potatoes

- 1 small zucchini

- 1 medium onion

- 2 cloves garlic

- 3 cups vegetable broth

- 1 cup of coconut milk

- 1 tsp dried thyme

- 2 tsp salt

- 1/4 tsp turmeric

- 1 tbsp olive oil

-1/4 tsp cumin

Directions:

- Chop the carrots, potatoes, garlic, onion, leeks, and zucchini into square chunks

- Add dry and liquid ingredients into the crockpot

- Cook on low for 8 hours or high for 4 hours

- Serve + enjoy
