Broccoli Rice
You've heard of regular rice, you've heard of cauliflower rice, but have you ever heard of, wait for it... broccoli rice. I mean really, it just makes so much sense. Potassium, fiber, vitamin C all swimming around in the delicious flavor of broccoli, sign me up. This rice is entirely fool-proof and perfect for meal prepping.
Prep Time: 10 minutes
Cook time: 5 minutes
Total Time: 15 minutes
Yields: 8 servings
Ingredients:
- 4 cups of broccoli, grated
- 1/2 green onion, chopped (optional)
- 3 cloves of garlic, minced
- 1 tsp of olive oil
- Salt (to taste)
- Pepper (to taste)
Directions:
- Grate broccoli florets until a rice texture is formed
This can be done with the smallest holes of a grater, with a food processor, or in a blender. Careful not to over process the broccoli with the last two options.
- In a pan on medium heat temperature, heat olive oil, garlic, and the white part of the green onion
- Fry until fragrant
-Add the broccoli
-Stir until the broccoli slightly softens
2- 4 minutes
- Serve
This possibilities with this rice though! Serve it with chicken, serve it with beef, enjoy a bowl of broccoli rice by itself! When I say this yummy alternative will change lives, that is no joke.
