Pumpkin Cheesecake Truffles

It is time to get this pumpkin party started! These delicate truffles are ideal for Autumn festivities and ridiculously easy to make. Win the holiday season with this ultimate Fall treat.


Prep Time: 20 minutes

Cook Time: 1 hour + 15 minutes

Total Time: 1 hour and 35 minutes

Yields 11 servings, 2 truffles each

Ingredients:

-1 8 oz package Philadelphia cream cheese, softened

-1/2 cup graham cracker crumbs (optional)

-1/4 cup powdered sugar

-1 tsp pumpkin pie spice, divided

-2 packages (4 oz. each) baker's bitters

The temptation is real.

Directions:

-In a large bowl, beat cream cheese with mixer until creamy

-Slowly add graham crumbs, sugar, and 3/4 tsp. pumpkin pie spice

-Mix well

-Scoop cream cheese mixture into 22 (1-inch) balls, using 1 tbsp cream cheese mixture for each ball

-Place on a waxed paper-covered baking sheet

-Freeze 10 minutes

-Melt chocolate as directed on package

-Dip cream cheese balls, one at a time into melted chocolate, turning until evenly coated with chocolate

-Return to baking sheet; sprinkle with remaining pumpkin pie spice, if desired

-Refrigerate for one hour or until firm


If necessary, re-roll each partially frozen cream cheese ball into a round ball before dipping in the melted chocolate. Since the cream cheese balls will soften quickly at room temperature, remove them from the freezer in small batches before dipping in chocolate as directed.
